Araponga is a micro-region nestled within the Matas de Minas, in the state of Minas Gerais. Embraced by the Atlantic Forest, the area is exceptionally well-suited to the production of specialty coffee — its biodiversity and canopy cover creating ideal growing conditions.

What makes Araponga particularly special is its microclimate. Individual farms can experience markedly different conditions from one crop to the next, contributing to subtle but distinct nuances in the cup. High mountain terrain drives a wide range of temperatures and humidity levels, creating the kind of environment where truly exceptional coffee thrives.

After harvest, the cherries were separated by density before being moved to raised drying beds. For the first two days, the layers were kept thicker to encourage natural fermentation of the fruit. Once moisture levels dropped, the layers were thinned and the beds covered, allowing for a slow, even drying over the remaining ten days.
