Ursa Major is our top-tier decaf, reserved for the most exciting decaffeinated coffees we can find. It exists for the times when “good decaf” simply isn’t enough, and you want to see just how far decaffeinated speciality coffee can go.
We originally created it for Bjorn Speciality Coffee in Holmfirth, where we wanted a decaf that could sit confidently alongside the very best coffees on the bar, rather than feeling like the obligatory caffeine-free alternative.
The precise coffee will change with the seasons and with what becomes available, but Ursa Major will always represent the same thing: the absolute peak of what we can find right now.
For this edition, we’ve chosen a Pink Bourbon from Finca Las Flores in Pitalito, Colombia, grown at 1,750 metres by brothers Johan and Diego Vergara.
Their family has been growing coffee for more than 30 years, but Johan and Diego have pushed things further through careful experimentation and precise processing. After selective harvesting, the cherries undergo staged anaerobic fermentations, oxidation and a brief thermal shock before drying. The coffee is then decaffeinated by Descafecol in Colombia.
The result is an intensely aromatic and complex cup with notes of clove, pink pepper, ginger and roses. Floral, spicy and distinctive, it is the kind of coffee that makes you stop and pay attention.
Ursa Major exists to prove that the ceiling for decaf is considerably higher than most people think.
