Caramel apple dipped in milk chocolate, with a soft floral lift on the finish. This is classic Colombian balance: smooth, sweet and very easy to keep drinking.
Popayán sits in Cauca at around 1,700m, sheltered by the Andes on the volcanic Meseta de Popayán. A stable climate, volcanic ash soils and 1,700–2,000mm of annual rainfall give the coffee a long, even ripening period, and you taste it in the cup: floral elegance carried on caramel sweetness.
We buy this through speciality importer Cofinet, who work with around 65 smallholder farmers across the region. Lots are assessed on quality, with premiums of up to 20% above market price when a crop is especially good, so the better the coffee, the better the return for the grower.
