A sweet, composed natural from Araponga, with the familiar depth of Brazilian coffee sharpened by a brighter fruit character. Milk chocolate and buttery macadamia give the cup its weight, while apple brings a clean lift before a long, toffee-like finish.

Araponga lies within Matas de Minas in Minas Gerais, surrounded by the Atlantic Forest, one of Brazil’s most biodiverse ecosystems. The region’s steep mountain terrain creates a patchwork of microclimates, allowing conditions to vary not only between neighbouring farms, but from one harvest to the next. The result is coffee with more definition and complexity than the classic low-acidity Brazilian profile might suggest.


Natural processing

After harvest, the cherries were separated by density and transferred to suspended drying beds. They were arranged in thicker layers for the first two days to encourage gentle fermentation within the fruit. As the moisture content fell, the layers were thinned and the beds covered, allowing the coffee to dry slowly and evenly over approximately ten days.

This careful approach preserves the sweetness and body associated with natural processing while keeping the cup clean and articulate.

Brewing

For filter, expect the apple character to sit above a creamy base of macadamia and milk chocolate. A balanced starting point will preserve that contrast between brightness and body.

As espresso, the cup leans further into chocolate and toffee. It also works well with milk, where the nutty sweetness carries through without losing definition.
